THE FUN STUFF: Deyvid grew up on the farm working alongside his grandfather, learning the rhythms of the land before he could even understand the market. Today, he represents Brazil’s "new wave" of producers, taking his family's generational legacy and leveling it up with modern agronomy, soil stewardship, and a high-end specialty focus.

1. Mechanically Demucilaged (No Fermentation)
Processed without fermentation to serve as the control. The profile of this coffee comes from growing practices and genetic varietal characteristics.
2. Wild Fermentation
Fermented for 48 hours with local wild microbes. This is the traditional method most coffees experience, where the mucilage is removed by the local microbe population.
3. Lactobacillus Inoculated Fermentation
Fermented for 48 hours, this fermentation enhances the production of organic acids, impacting the brightness and complexity of the coffee. 
4. Saccharomyces Yeast Inoculated Fermentation
Fermented for 48 hours, this fermentation enhances the production of flavor precursors, impacting the body and complexity of the coffee.

THE PRODUCER: Located in the middle of the Mantiqueira mountain range, Fazenda Rio Verde has been producing coffee for over 130 years. Surrounded by 773 hectares of virgin forest, waterfalls, and rich volcanic clay soils, the farm is a natural sanctuary dedicated to high-quality coffee.

THE COFFEE: Cultivated above 1,000 MASL across the farm's top 32 terroirs, the Ipanema Premier Cru represents four years of research into varietals, maturation, and processing. Utilizing Yellow Bourbon, Yellow Catuaí, and Red Acaiá, state-of-the-art facilities guarantee consistent, exceptional microlot harvests every year.

THE COFFEE: Topázio (100% Arabica)
A high-performing yellow-cherry hybrid derived from Mundo Novo and Catuai, grown in the Cerrado Mineiro Denomination of Origin. Processed using a Natural Anaerobic approach, post-harvest drying on raised beds and super controlled fermentation to maximize sweetness and cup clarity.

THE FUN STUFF: Named after their three daughters (Paula, Malu & Fefe), Três Meninas is a 4th-gen family farm breaking the mold!
They partner with local universities on water-saving irrigation, operate on biological fertilizers, and run a certified carbon-negative footprint sequestering over 5 tons of carbon per hectare.
